Shortbread

Did you know what you can make with one simple dough?
While sitting on my sunny bench and munching on a shortbread I was thinking about this question and made a lot of different shortbread which are not so sweet like biscuits and go as healthy snack into the lunch box of my kids.

Here is the base recipe:

Soften 1 cup (250g) butter or spread with 1/2 cup honey until fluffy.
Then add 2 1/2 cups flour and 2 Tbsp cornmeal and knead to a dough.
Give it onto a baking paper and roll a log of 5 cm in diameter. Let cool in the fridge for 2 hours.
Then cut 1 cm slices and bake for 1 hour by 100 degree C.

To make digestives just exchange one cup of flour with whole grain and add 1 Tbsp aniseed.

To make a nice calming treat use lavender sugar instead of honey and add some grounded lavender if you like more flavour.

To treat your little princess use rose sugar instead of honey and add 1 tsp rose water. For rose sugar powder dried rose pedals with the sugar or just use rose infused honey.

For a snack with cheese or herb dip add 1 Tbsp grounded caraway, half tsp grounded fennel, 1 Tbsp poppy and sesame.

Orange peel and orange mint are also fantastic additions.

Or what about peppermint and some chocolate chips?

You see there is no limit for your fantasy ;-)

PS: To make the shortbread sweeter you may like to add crushed or powdered stevia leaves ;-)

Baking day

Today we made a delicious Walnut-Apple-Cake.
The kids have holidays so Aileen and David were helping me (especially by sneaking some dough into their mouth)
This special cake has a nice topping with honey and cinnamon.

As you see, even the finished cake isn’t save :-)

Rainy day

The rain couldn’t stop us to go to the “rain forest” and bring home some treasures as well as food for Benny.
You could think it is autumn in New Zealand, but we still have summer. Branches, pine cones and colourful leaves lay on the ground.

Our shoes were soaked but our heart smiled. At home we had a nice warm sage tea and than we started to bake some goodies.

If you got time, just try out my recipe (please, click here) and put in it what ever you have on hand, eg: peppermint, lemon verbena, thyme, rosemary… nuts! Oh yeah! I love nuts! I think one of the worst things for me, would possible be a nut allergy.
