Oak leaf sandwich

Christoph made another amazing bread this weekend.
It is always fun to watch the dried yeast bubbling up like a mushroom.

This lovely loaf not only looks good…

And for the topping I recommend Pastrami with oak leaves :-)

Yummy! Oak leaves enhance the taste of Pastrami… yes… I guess my Vegetarian time is really over…

Looks yummy–I never heard that oak leaves are edible, though I taught a course in wild edibles.

Guess it is not to be recommended to eat oak leaves in big amounts or when they are mature. But if you bite into a mature leaf you will probably spit it out anyway :-)
You will get a taste of tannic acid… and your stomach will tell by a contracting reflex…

The same with the acorns, they have to be watered before consumed. The Native American hang them in a basket into a creek over night to flush away their tannic acid.

I used to eat acorns, do just that–hang them int he water–but also sometimes boil them–the green acorns of white oaks can be eaten raw (in small quantities or roasted without treatment. But I never ate the leathery old leaves or even the new ones. But under the oaks, I find nice mroel mushrooms.
